Energy Bites

Yield: 12-16 bites

INGREDIENTS:

  • 3/4 cup organic old fashion oats

  • 1/4 cup chia seeds

  • 1/4 cup flax meal

  • 1/2 cup organic nut butter (sunflower seed butter, almond butter, peanut butter, etc)

  • 2 TBSP honey

  • 1 Tsp vanilla extract

  • 1/2 tsp salt

  • 1/3-1/2 cup chocolate chips

INSTRUCTIONS:

Combine all ingredients in a bowl. Roll into bite sized balls and place individually on a parchment covered cookie sheet. Refrigerate for a few hours then store in a large mason jar or other sealed container.

  • note on nut butter: the consistency of your nut butter will impact this recipe. Make sure the nut butter is stirred well and is not too dry or too runny. If the balls are not coming together, you may need to add more.
