Healthy Chocolate Mousse

A go-to whole foods, sweet treat that is filled with antioxidants, healthy fat, and is plant-based. It’s both filling and supportive for my friends with a sweet tooth.

Ingredients:

1/2 cup raw cashews soaked and drained

1/3 cup cacao 

1 can coconut cream

1 tsp vanilla 

2 Tbsp maple (or more if you like things sweet) 

Pinch of salt 

For some fun Ayurvedic variations:

Kapha-balancing version

• add ground cardamom + a ground pinch of ginger

Vata version

• add ground cinnamon + a little extra maple

Directions:

Soak cashews in warm water for at least an hour before making.

Drain cashews once ready and add to a blender with all other ingredients.

Blend until smooth.

Pour into small bowls or ramekins. Cover and refrigerate for at least 5 hours.

Add toppings of choice (I did shredded coconut and rose petals), and enjoy! 

P.S. this is the exact same recipe I use for my summer fudgesicles. I just pour the blended ingredients into a mold and freeze 🍦☺️ So good on a hot day.
