Easy Turkey Chili

The minute it gets cool out...I am ready for some chili. Who is with me?!

If so, this recipe is for you! Warm, grounding, filling, and quick to prepare with pantry staples.

Feel free to sub/swap things out as you please.

Yield: 4 servings

INGREDIENTS:
1 lb pasture raised or organic ground turkey
1 yellow onion (diced)
3 garlic cloves (rough dice)
1 red bell pepper (diced)
3-4 Tbsp chili powder
1 tsp garlic powder
1 tsp ground cumin
1 tsp oregano
1 tsp salt 
1/8 tsp cayenne pepper
1 can organic kidney beans
1 (28 oz can) organic crushed tomatoes
Optional 1/2 cup corn 

INSTRUCTIONS:

  1. Add 2 tbsp of olive oil to a large stock pot at a medium heat.

  2. Add diced onion.

  3. Stir for 2 minutes.

  4. Add diced red bell pepper and diced garlic.

  5. Stir for another 2 minutes.

  6. Add all of the spices to the pot and bloom for another 2 minutes (make sure they don’t burn by turning the temp down or adding more oil).

  7. Then add organic ground turkey. Mix to incorporate and break apart. Sauté for another 5 minutes.

  8. Add rinsed and drained kidney beans, crushed tomatoes, and corn. Mix.

  9. Turn heat down to low and simmer for ~30 minutes.

  10. Chili should be chunky but you should still see some liquid simmering. Cool before serving. Taste to see if you want to add more spice.
