Banana Oatmeal Chocolate Chip Cookies

Yield: 15-17

INGREDIENTS:

  • 2 large ripe bananas mashed

  • 1.5 cups of oat bran or oat flour 

  • 1/2 tsp baking soda

  • 1/4 tsp salt 

  • 1/4 tsp vanilla 

  • 1/2 cup chocolate chips

INSTRUCTIONS:

  1. Mash bananas.

  2. Add oat bran, vanilla, baking soda, and salt. 

  3. Mix until the batter resembles a paste.

  4. Fold in chocolate chips.

  5. Scoop 1 tbsp of batter and place 1 inch apart on a lined cookie sheet.

  6. Push them down with the back of a fork and reshape into a cookie shape (they don’t expand or change shape much so keep that in mind).

  7. Bake at 350 for 13-14 minutes until the edges are golden brown. Cool for 10 minutes on the hot tray and enjoy!!

IMPORTANT TIP: I store these in a airtight container in the fridge, I find they keep better that way.
