Trashcan Pesto

Baby greens going bad in the fridge? No worries! Make pesto! 🌱👌 I used a bunch of scraps from the fridge to whip up this bad boy today...I’ll provide options for substitutions but have not tried them.

YIELD: 3-4 oz

INGREDIENTS:

3 cups baby kale (sub baby spinach).

1/4 cup unsalted pepitas (sub pine nuts, walnuts, cashews)

Juice from 1 lemon
🧄3-4 garlic cloves
🧂1/2 tsp salt

1/2 cup basil (I added a little parsley that was going bad too)
Shredded rind of an old peice of parmigiano-reggiano. It was proabably around 1/4 cup (sub regular parm, pecorino, asiago or 1-2 tbsp nutritional yeast) 

1/4 cup olive oil

INSTRUCTIONS:

  1. Blend all ingredients in a food processor and stream in olive oil. I would estimate that I used around 1/4 cup maybe a bit more.

  2. Scrape down sides and blend again. 

  3. Taste it. Add more ingredients to your liking.

  4. Put into an airtight container and store in the fridge.
