Soft Almond Flour Chocolate Chip Cookies

I’ve been making these babies on repeat all summer. I also love that they are refrigerated because it satisfies my healthy sweet tooth and my craving for cooler things in the summertime. 

YIELD: 16 cookies


INGREDIENTS


4 tbsp. Melted ghee or grass-fed butter

1/3 cup coconut sugar

3 tbsp. ground flaxmeal

4 tbsp. water

1.25 cup almond flour

1/4-1/3 cup dark chocolate chips 

1 tsp. baking soda

Scant 1 tsp of salt


INSTRUCTIONS

  1. Preheat oven to 350 degrees F 

  2. Make flax egg (3 tbsp flax meal with 4 tbsp of water). Let is sit on the counter.  I have also tried using a regular egg and it works too!

  3. Melt butter. Then beat in sugar. 

  4. Add flax egg (or regular egg). Mix until incorporated.

  5. Mix dry ingredients: almond flour (spoon into dry measuring cup and level), baking soda, and salt.

  6. Add dry ingredients incrementally to the wet mixture.

  7. Mix until smooth.

  8. Fold in dark chocolate chips 

  9. Scoop 1 tbsp balls onto a cookies sheet lined with a silicone baking mat (or parchment paper).

  10. Optional: Flatten cookies with the back of a fork (they do not expand much so this will be there shape).

  11. Bake ~14 minutes.

  12. Cool and then store in an air tight container in the fridge.
