Plum Crisp
Mmmm a sweet treat to make the lips smack while keeping the belly happy. This recipe uses a minimal amount of added sugar and leans on the sweetness of fruit and the power of spices.
YIELD: 4-5 servings
INGREDIENTS:
Filling:
4-5 plums (preferably organic)
1 tbsp coconut sugar or maple syrup
½ tsp cinnamon
¼ tsp nutmeg
Topping:
1 cup organic oats
1/4 cup chopped walnuts
¼ tsp cinnamon
¼ tsp nutmeg
2 tbsp melted coconut oil
1 tbsp maple syrup
1 tbsp water
¼ tsp vanilla extract
Kitchen Supplies:
Standard pie pan (9 inches)
Cutting board
Chef’s knife
Dry measuring cups
Measuring spoons
2 mixing bowls
1 rubber scraper
INSTRUCTIONS:
Preheat the oven to 375 degrees F.
Wash the plums and then dice removing any pits or stems.
Place diced plums into a bowl and mix with coconut sugar, cinnamon and nutmeg.
Transfer plum filling into a greased pie pan and bake for 15 minutes.
In the meantime, make the topping by mixing all the topping ingredients in a bowl. Make sure the mixture is consistent and damp (there should be no chunks of coconut oil or oats).
Once the filling has baked for 15 minutes, carefully remove the pie pan from the oven and add the topping. Spreading it evenly over the top.
Bake again for 15 minutes. The oats should be lightly browned.
Remove from the oven and cool for 15-20 minutes. Enjoy!
TIPS:
This recipe is great with shedded coconut on top or a side of ice cream! You can also make it with apples or pears.
